Hashbrown Quiche

Quick, Easy Breakfast, but...Not Really a Quiche

Ingredients
  

  • 3 - 4 cups frozen, shredded hashbrowns, thawed
  • 1/3 cup butter, melted
  • 1 cup diced, cooked ham
  • 4 ounces freshly shredded cheddar cheese You'll be so happy if you shred your own cheese rather than purchasing pre-shredded cheese, which has a coating.
  • 1/4 cup green bell pepper, diced
  • 2 eggs
  • 1/2 cup milk I use almond milk, but any milk will do.
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Method
 

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Press hashbrowns between paper towels (or clean dish towels) to dry. Press hashbrowns into bottom and sides of an ungreased 9" pie plate. Drizzle with the melted butter.
  3. Bake hashbrown "crust" at 425 degrees Fahrenheit for 25 minutes. Remove from oven and set aside. Adjust oven temperature to 350 degrees Fahrenheit.
  4. While the crust is baking, dice the ham and bell pepper and shred the cheese,
  5. Combine the ham, cheese, green pepper and spoon into crust.
  6. Gently beat the eggs, milk, salt, and pepper. Pour egg mixture over ham mixture in the hashbrown crust.
  7. Bake in 350 degree Fahrenheit oven until a knife inserted comes out clean. This can take anywhere from 30 - 50 minutes depending on the oven.
  8. Remove from the oven and allow to stand for 10 minutes.
  9. Slice and serve warm. A cool glass of orange juice is a fabulous complement!
