
Quick, Easy Breakfast!
This recipe is courtesy of my mother-in-law Carole.
I rarely cooked with Carole – usually for family gatherings and holidays. She had an incredible collection of recipes that I received upon her passing. When I make a recipe from her extensive box, I feel connected to her. I’m sure more of Carole’s recipes will make their way to this blog.
As you know, I am thrilled to share my kitchen with other home cooks, and learn from the skills they’ve developed over the years. When I read and made this recipe of Carole’s I was delighted to see that not only is it achievable by any level of cook, it’s also delicious! The end result is so rewarding! Yummy!

Ingredients
Method
- Preheat oven to 425 degrees Fahrenheit.

- Press hashbrowns between paper towels (or clean dish towels) to dry. Press hashbrowns into bottom and sides of an ungreased 9" pie plate. Drizzle with the melted butter.
- Bake hashbrown "crust" at 425 degrees Fahrenheit for 25 minutes. Remove from oven and set aside. Adjust oven temperature to 350 degrees Fahrenheit.
- While the crust is baking, dice the ham and bell pepper and shred the cheese,
- Combine the ham, cheese, green pepper and spoon into crust.

- Gently beat the eggs, milk, salt, and pepper. Pour egg mixture over ham mixture in the hashbrown crust.

- Bake in 350 degree Fahrenheit oven until a knife inserted comes out clean. This can take anywhere from 30 – 50 minutes depending on the oven.
- Remove from the oven and allow to stand for 10 minutes.

- Slice and serve warm. A cool glass of orange juice is a fabulous complement!
